RE: I hope everyone is aware how difficult, or impossible, it is to help answer some of these questions with so little information given.
So I'll have to make the assumption that you are using the small PCB with a PIC 16F84 (or 166C84) and either a MAX 190 or 191 to do your A/D conversion. If this is the case then you might find what you're looking for regarding sampling rates at:

As far as 'How long do most signals last?' all I can say with that little info is that all frequencies have a different period, which is what makes them different frequencies.
